8.5" 220mm Nitro-V stainless steel XXT Gyuto, tested to 63HRC, in my extra-heavy geometry. This knife is a great general use knife, with a 65mm heel height vs the standard 50mm, allowing even better leverage and increased forward balance. The extra-heavy geometry provides added forward balance as well, for superior cutting performance and less perceived cutting effort, as well as substantially improved food release granted by the proprietary geometry.
The handle is my SL (standard length) Western Hybrid geometry, which has been argued to be my most visually stimulating, as well as my most comfortable handle to date. Handle materials are a very special 'Arizona Sunset' triple dyed feathered box elder (from my own property), along with a single copper spacer and two thin G10 liners. Also included is a matching hand made leather saya.
This knife is a special piece for me. It was the first of a series of Nitro-V stainless steel knives created in my new Virginia shop, that I offered in project form. The handle was created last year, with the dye being a tribute to where I had come from (Arizona), and the wood being sourced from the place that has become my home (Virginia). The final result was, in my opinion...stunning to say the least. The customer that originally purchased the knife has become a good friend over the years, having purchased a number of knives from me...often selling them to fund the purchase of another of my knives. As some of you know, I ALWAYS offer to resell my customer's purchases in my store, at full retail value. I bring them in and restore them to new, as delivered condition. This has resulted in customers who wanted a specific knife and missed out, the chance to purchase the knife they loved so much...while allowing the original owner to get his money back for whatever reason he needed/wanted it. That said, the original owner of this knife graciously offered to allow me to use it as a demo knife for some very high level professionals in the industry before it was delivered to him. The Pepin family, Chef Michele Mazza, Chef Rick Bain, and Chef Bronson Macomber, to name a few. I asked them to genuinely critique the knife, but the worst response I received was from chefs used to rock chopping, due to the flatter, Japanese inspired edge profile...but even they were able to make the unfamiliar profile work, and stated that they would be willing to work towards accomodating the different cutting style required, in order to make use of the superior cutting performance. The initial response from EVERY chef to put the knife through food was 'Wow'. A number of them offered to buy it on the spot lol!
In the end, I'm grateful for the opportunity to have this knife in hand again, as well as to dress it up with a saya as it deserves. I can't wait to move it into the next owner's hands. It's a BEAUTIFUL knife, with exceptional performance, and its own unique story to go with it. It's also an example of the system I've tried to develop for my customers...to increase the value inherent in their purchase, working as intended! I think we can all be grateful for that lol!
