9" 230mm AISI W2 tool steel Honyaki* XT "Nabunka", tested to 65HRC, in my ultra laser geometry. This knife is THIN, with a 66mm heel height that carried forward to 50mm at the kiritsuke tip. This allows great leverage while rocking, and increased forward balance for superior cutting performance. Food release is great due to my proprietary geometry. The edge profile on this knife is a cross between Japanese and European, which will excell at rocking, but still slice competently.
The "Nabunka" name comes from the overall 'bunka' profile of the edge and tip, crossed with my 'nakiri' geometry. This is a general purpose knife with a nod towards vegetable prep. The pricing is SPECIAL and dependent upon public review of the knife!!...as this is the first one available to the general public. The handle is my Western Hybrid geometry, in a special 13 piece laminate design, with very special Brazilian rosewood and ebony (provided by TJ Thompson of TJ Thompson Guitars!).
A custom hand made leather saya can be made at an additional cost.
This sale includes one completed knife.

*'Honyaki' is a Japanese term describing a method of forging a knife from one single material, almost always high-carbon steel, and quenched in oil (abura-honyaki) or water (mizu-honyaki) with clay to yield a soft, shock absorbing spine and hard edge for high sharpness. This process, when done correctly, also results in an exquisitely beautiful, permanent line in the blade...that can be polished in such a way as to visually describe the variance of crystalline structures that are the only true indicator that the process was successful.
