6" 160mm Nitro-V stainless steel XH Ko-Nabunka, tested to 63HRC, in my extra-heavy geometry. This knife was designed to do everything my Ko-Gyuto (which is THE go-to knife in my kitchen...the ORIGINAL "Tall Petty"...before anyone else was doing them) does...but do it better. The kiritsuke tip and spine profile in particular allow for excellent tip work, while providing even more forward weight than the Ko-Gyuto. The only reason for grabbing ANYTHING else is because you want to play with it. A GREAT general use knife, line knife, and petty. It has a 50mm heel height vs the standard 'petty' 35mm, allowing for far greater utility. It will chop and do board work like a gyuto, break down protein like a petty, and scoop vegetables like a nakiri. The extra-heavy geometry provides a substantial feel, and added forward balance as well, for superior cutting/chopping performance and less perceived cutting effort, as well as substantially improved food release granted by the proprietary geometry.
This sale includes one completed knife. You can choose either the pictured Japanese edge profile, or a modified European edge profile (for rock chopping) at no extra charge. The knife comes with my standard geometry handle (faceted diamond, please select in the options) and standard handle material (currently a rather beautiful stabilized silver poplar, you can see examples pictured above, and video on my YouTube under the title 'Stabilized Silver Poplar'). G10/metal/G10 spacers in either a straight or diagonal configuration are also included. Upgraded handle material, and spacer options are available for an additional cost, and can be discussed before starting the knife (please select 'Custom Material' above, and use the 'Contact Me' option on the main page).
